Worldly Flatbreads
This course will focus on several of the great flatbreads of the world from Europe, Asia, and the Middle East. Examples include pita, focaccia, and fougasse provencal. It will amaze you just how good flour, yeast, salt and water can taste when transformed into the staff of life. At the other extreme, imagine the depth of flavor possible with dough containing fresh herbs steeped in extra virgin olive oil. We'll go back in time and forward in expression during this new course! This is a “participation type” course; each student will take home bread fresh-from-the-oven. sessions count varies by term
