Rustic Italian Breads
Back by popular demand, with a focus on creating great textures and crusts,this course will include such classics as pane rustico, ciabatta, focaccia, and filoncino. We will cover advanced topics such as using starters (bigas), how to handle wet dough using new "no-knead" methods, and hearth baking. This is a “participation type” course, and each student will take home a bread fresh-from-the-oven. Session count varies by term.
