Fun Italian Breads Series
This Fall mini-series will include 3 classes spaced out in 2 week intervals. With a focus on FUN while learning, we'll progress through increasingly wetter doughs. Beginning with breadsticks @ 65% hydration, then focaccia @ 75%, we'll end with ciabatta @ 85%. Whether you are new to yeast breads or an experienced baker, we guarantee you'll have fun while learning some new recipes and techniques.
Authentic Ciabatta
This class will teach you how to make the famous Italian loaf bread known as ciabatta. The secret to this bread is extremely wet dough with hydration at 85% which you will learn how to handle in this class. Our breads will feature a topping of coarse sea salt and freshly ground pepper if desired. The instructor will help beginners overcome wet dough anxiety and expose seasoned bakers to a new recipe and techniques.
This will be a “participation type” hands-on course, and each student will take home bread fresh-from-the-oven. We will utilize the well equipped culinary classroom at Conard High School which is convenient to I-84. Class size will be limited, so be sure to sign up early. $5 materials fee is payable to the instructor. 1 session
