I forgot to ask last night - can you make the dough the night before and let it sit overnight before using it the next morning? If yes, can you keep it on the counter or do you put it in the fridge?

• Glad you enjoyed the class! Yes, you can do a "retarded fermentation" in the fridge. Almost any dough can be put in the fridge for a day or two. Bring to room temp, shape, and proof before baking. If left on the counter overnight it would certainly over-rise and smell very yeasty.
