• Polarbrød is actually a Swedish baking company that freezes their breads immediately after cooling to be distributed globally (similar to IKEA), hence the name "polar" (frozen) bread. Mjukkaka is what the bread is usually called and means softcake in Swedish. Arnold, Pepperidge Farm, and even Aldi offer similar breads here.

• Don, here's the bread critic's comments: good texture, nice taste and sweetness. Using baking terms now! As you can tell, it was a hit at our house.

• The Havrebrød proved to be very sticky and gave several of us problems removing from pans. The recipe has been updated, and I recommend that the dough be rolled in oats to coat (instead of just a topping) to help prevent sticking. A non-stick pan would ideal. Furthermore, the oats made this bread very moist, so I suggest finishing these loaves directly on the oven rack for the last 10-15 minutes to dry out the bottoms.

• Thanks again for an enjoyable class. I had fun. I liked the recipe from last night. I want to make it again but I think I will do without the salt topping and instead try caraway seeds or leave with just the glaze. Have a great summer and I look forward to more classes in the fall.
